I find a can of lentils can make a quick, rich soup with endless variations. I often make the following:

1 whole can lentils - incl. broth
huge handful of chopped spinach
pinch sea salt

I'll then add chopped carrots, parsnips, sweet potato, peppers - whatever I've got. Sometimes a spoonful of curry powder, or half can of diced tomatoes. Adding a cup of low sodium veg broth is good too.

Cook for about 15 min - quick easy and great with a huge salad.

Here's one of my favs....sub in a chopped yam instead of rice if you are not on the rice.

Saute 1/2 onion in a pan with 2 cups of mushrooms. Add some garlic, I use 4 cloves, hehe. Add in some chile or habanero if you like as well as some finely chopped ginger and a teaspoon of curry powder or a couple shakes of mrs. dash. Then add 1 cup cooked brown rice, 1 can of lentils and 1 can of black beans. Add in 3 cups of raw spinach or 1 cup broccoli or 1 cup bok choy. Add in a chopped bell pepper once its all simmered together and is ready to serve.

Yummy!

awesome recipies by everybody!

To Tim' soup, I added organic beets and instead of the vegetable broth, I used a miso soup base instead...I lower the sodium content down by adding a bit more water.

Miranda's suggestion of adding tofu(extra firm) was great for texture and contrast.
