Thought it might be helpful to start a link for any thoughts/discussions! I am in the midst of making a vegetable soup with my slow cooker and am pretty excited about a yummy dinner!
Ingredients:
Veggie broth *Organic Low sodium
Carrots
Lentils
Chickpeas
Mushrooms
Tomatoe
Mushrooms
Tofu *Smoked and regular
lots and lots of herbs.

My nut mixture is from the bulk aisle and consists of cashews, pistachios, almonds, pecans (all unsalted and plain). Though I am getting worried that I may be eating too many nuts.

I have further discovered that I really don't like salad, so everything is either steamed, stir fried, or boiled for me!

I was pretty affected by Omnivore's Dilemma. It really put into perspective for me that food is one of the most crucial aspects of our lives - yet over which we choose to exert almost no control. I say choose because the book made clear to me the extent to which we allow other forces to determine what and how we eat.

It also made me think about how we build our lives - we try to pursue work that fulfills us, or at least provides for our needs - we want to live in an apartment that is comfortable - but we often ignore the role of food in our lives. On a small piece of land I could grow some decent stuff - and still live in close proximity to the city - but especially true in BC - also get good, quality local produce, meat, dairy etc.

I also appreciated the point of view of the author - never preachy, but investigative and honest. Good sense of humour too. But the concept of exercising control over one's life - especially in an age when everyone is vocal, and when so many people appear to be politicized, yet exert no real control, discipline or decision making in their personal lives.

Henry Rollins said once he didn't drink or take drugs because those were the tools used to fatten us all up for the slaughter. I can't help draw a parrallel between his observation and the effects of consuming too many Big Macs.

I got inspired by Miranda's soup to I decided to try my own. Still cooking for a while, so who knows how it'll be . I didn't think too hard before I started throwing things in the slow cooker.

Here's what was at the scene of the crime:

6 cups of water
3 large beets
2 large potatoes
1 large fennel bulb
1 large celery root
3 stalks of celery
1 small tomato
2 cobs worth of corn kernels
1 small onion
8 small chili peppers
2 pinches chili powder
1 tablespoon organic vegetable stock powder

Gonna try slow-cooking on high for 5 hours.
