Corn Tacos! This is inspired by Dan as he wanted to make me a nice meal last Saturday that followed the rules. I made it again today with a little twist:
Corn tortillas - found at Safeway. Mainly made up of ground corn and water (and yes...some other things I can't spell...but hold the corn powder together). A fav as gluten free too.
Filler: Garlic (2 Cloves) Spinach (looked like 2-3 cups after chopped) Tomatoe (1/2) Mushrooms (Shitake and white) Red peppers Corn Black Beans Tofu
Spices: Anything of course - Cumin, Oregano, Parsley, Celery seeds, Chili powder, sea salt/pepper.
Toppings: Avocado and Jalapeno peppers.
